Vineyards
The vineyard on which Azpilicueta is based is the Fuenmayor vineyard. Cultivated more than 800 hectares. in their different places.
The Fuenmayor vineyard is implanted in an irregular topography, at different altitudes, in a large mixture of soils, with different orientations. This translates into many microclimates and, consequently, that the same variety is expressed in very different ways.
Of all the plots, we select each vintage those that will produce the grapes to produce the Azpilicueta wines.
Each one of the plots is controlled, its pruning, the evolution of its vegetative cycle, the advance of maturity, we taste its grapes. And, the time of the harvest is determined for each plot.
Azpilicueta wines are a tempranillo assembly, dominating, giving the typicality; Graciano contributing with its particular aromas and its structure to make it a guard wine, and Mazuelo, contributing its acidity, its freshness in the mouth.
Processing and breeding
Manual harvest
Fermentation in stainless steel tanks at controlled temperature around 25ºC.
Maceration of approximately 12 days.
This wine has been aged for 12 months in American and French oak barrels, with command of American oak over French. Complete its aging for a minimum period of six months in the bottle
