Protos Roble is a mono-varietal of Tinta del País. The grapes used grow in their own vineyards. The harvest is done manually and the clusters go through a selection process. The grape is destemmed and cold macerated to get the best aromas of the skin. The subsequent fermentation takes place, at a constant and controlled temperature, in stainless steel tanks.
Protos Roble finally makes a 6 month aging in American oak barrels before resting another half year in the bottle.
